Date Chocolate Chip Cake
This is an easy, moist, delicious cake. It's even more moist the next day.
Date Chocolate Chip Cake
1 cup chopped date ( chop whole dates because they are more moist than the ones that are already chopped)
1 1/2 cup boiling water
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
3/4 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 3/4 cup unbleached flour ( I use part whole wheat- 1/4 cup)
1/2 teaspoon kosher salt
3/4 teaspoon baking soda
1 cup mini semi -sweet chocolate chips ( I like Ghirardelli)
1/2 cup chopped walnuts
optional- add 1 tablespoon of chia seeds to the dates and water mixture
Preheat oven to 350.
Combine dates and boiling water (and chia seeds if using). Set aside to cool.
Cream butter, sugar and the first 3/4 teaspoon of baking soda.
Add the eggs one at a time, beating well after each addition. Add vanilla and mix well.
In a small bowl, whisk together the flour, salt and second 3/4 teaspoon of baking soda.
Add half the flour mixture to the batter and mix just until combined. Add dates and water and mix until just combined. Add the rest of the flour mixture and mix until just combined.
Pour into a greased 9 x 13 baking pan.
Sprinkle chocolate chips and nuts on top.
Bake at 350 for 30-35 minutes.
