This is so simple, healthy and delicious!
I arranged some of the salad ingredients on a plate to take these photos some time before I was ready to serve the salad, so the spinach is not coated well in the photos.
I ate this serving myself!
I have added diced cooked chicken tenders to this salad before and it makes a nice lunch.
Strawberry Spinach Salad
6 cups fresh spinach
2 cups fresh, sliced strawberries
3 tablespoons finely diced green onion
1/2 cup toasted nuts- pecans, slivered almonds or walnuts
vinaigrette-
1/4 cup balsamic vinegar or your preferred vinegar
2 tablespoons sugar
1 teaspoon poppy seeds
1/4 teaspoon dry mustard
2 tablespoons honey
kosher salt and black pepper to taste
3/4 cup extra virgin olive oil
In a large bowl, toss together the spinach, strawberries and toasted nuts. Set aside.
In a small bowl, whisk together the vinegar, sugar, poppy seeds, dry mustard, salt, pepper and olive oil; or put all in a jar and shake until mixed.
Drizzle part of the vinaigrette on the salad and toss. Continue to add and toss until salad is coated.
Do not add vinaigrette until just before serving.
